Café de Paris Monte-Carlo:The Brasserie du "Tout-Monaco" reopens its doors It is a true institution of Monegasque life which reopens its doors this Tuesday, November 14. The new Café de Paris Monte-Carlo is finally revealed on Place du Casino after 19 months dedicated to its metamorphosis. A founding place of the legend of Monte-Carlo, named at its birth in 1868 "Le Café Divan", the Café de Paris Monte-Carlo embodies a "brasserie" spirit which has always known how to reinvent itself far from the effects of fashion, and to which all generations are attached. The iconic brasserie of the Principality is now spread over two levels, and from its new terrace upstairs, a unique view is offered over the legendary Place, the Monte-Carlo Casino and the Hotel from Paris Monte Carlo.

By spring 2024, the shops lining the building will have opened their doors, as well as the Amazonico Monte-Carlo restaurant which will take place on the rooftop. Monte-Carlo Société des Bains de Mer continues to reinvent its legend with the reopening of its historic establishment. The new Café de Paris at the heart of the evolution of Place du Casino 

The new Café de Paris Monte-Carlo brings the final touch to the metamorphosis of the historic heart of Monte-Carlo Société des Bains de Mer, started in 2014, with the renovation of the Hôtel de Paris Monte-Carlo, the creation of the One district Monte-Carlo, the new developments of the Monte-Carlo Casino, the restructuring of the Jardins des Boulingrins and the Place du Casino. The restructured building sees its volumes harmonized on 3 levels, two for the Café de Paris brasserie and one for Amazonico Monte-Carlo, the future Monegasque address of the international festive catering concept, expected next spring. It is at the same time that the Chopard, Arije, Tag Heuer and Tiffany & Co boutiques will be fully revealed along Allée François Blanc, Avenue des Spélugues and the Casino gardens. As for the Casino Café de Paris, kept open during this transformation, it will offer its customers a new exclusive entrance at the start of 2024. This vast real estate development project was entrusted to the Monegasque architect Alexandre Giraldi and Alain-Charles Perrot, Chief Architect of Historic Monuments, under the direction of Luc Leroy, Director of Construction and Built Heritage. 

The Brasserie du "Tout-Monaco" reinvented 

The philosophy of the new Café de Paris Monte-Carlo: the great classics of the French brasserie interpreted with indulgence and simplicity, sommellerie as a new master asset, and renewed experiences at any time of the day, in bistro or restaurant mode, at the table , or around the counter, at the lounge bar or in the open air, with a new unique view of Place du Casino, from the new terrace upstairs. On the ground floor, the refined bistro spirit welcomes residents and passing visitors, in a glorified Art Nouveau setting. Restored historic stained glass windows, checkerboard marble, terrazzo mosaic, leather and woodwork, green, pastel pink or burgundy tones, high ceiling, all the classic codes of the French brasserie are brought together, with a completely new attention to light. In the center of the room, just placed under the monumental chandelier, a large zinc counter has taken its place. We sit down there to enjoy a cocktail, or a glass of wine in all simplicity, with a suggestion of the new snack menu or seafood from the famous Banc de l'Écailler, which is making a comeback.

The experience continues on the iconic terrace, right on the bustling Place du Casino, to see and be seen. Upstairs, there is a more elegant version which takes up residence in a cozy atmosphere, marked by warm tones, parquet flooring, and tablecloths. The perfect setting for a business lunch, a romantic dinner or a dinner with friends, where you can take your time, before or after a show at the Opera or a moment in the casinos. The space also serves as a setting for a bar with warm curves and is extended by the other great novelty of the place: a 200 m² terrace which overlooks the legendary Place du Casino.The DNA of the brasserie was reinvented by the interior design and architecture firm David Collins Studio. 

A new brewery experience 

In its new version, the Café de Paris Monte-Carlo pulls out all the stops, with a team gathered around Eric Gorjux, who took the helm of the Monegasque institution in January 2022. Victor Marion, who made his ranges a few years ago at the Hôtel Hermitage Monte-Carlo takes charge of the kitchen. "The Café de Paris Monte-Carlo is a Parisian brasserie on Mediterranean soil," quotes the Chef, who specifies: "While ensuring the continuity of this great culinary history, we will work closely with local producers and introduce more seasonality, more movements on the map. » On the menu, the essentials of the Café's gastronomic heritage: gratinated onion soup, leeks with gribiche sauce, pâté en croute, eggs mayonnaise with a touch of caviar, millefeuille whipped fresh... The Suzette crepe, born at the Café of Paris in 1896, during a visit by the Prince of Wales, flambée in front of customers, will continue to amaze! Sommellerie made its debut with the arrival of Noël Bajor, a defector from Louis XV-Alain Ducasse at the Hôtel de Paris, who passed on his know-how here with the support of a team of six sommeliers. An expertise which will bring relief to the fundamentals of the brewery, and will be appreciated by international customers who understand and love French wines. A new mixology is distributed across three bars to satisfy all desires under the aegis of around twenty bartenders. Finally, on the service side, French elegance will be in the spotlight, cultivating the joy and sharing that make up the living spirit of the place.
