Christmas would not be quite Christmas without the log cake of the Hotel Hermitage. Highly sought to decorate the Christmas tables in the Principality, it recreated every year the marriage between form and taste both subtle and bold. This year it is the harmonious curves and futuristic "Pavilions Monte Carlo" style which inspired this new creation of the pastry chef at the Hotel Hermitage, Nicolas Baygourry.
The log of Nicolas Baygourry gives its rounded shapes inspired by pebbles from the beaches of the Riviera, tastes and textures, full of freshness and lightness to sublimate the last note of a traditional Christmas dinner. Made with white chocolate mousse, coconut and pepper "Timut" bay whose citrus and woody fragrance combines perfectly with chocolate, Christmas log reveals a creamy passion fruit, aloe vera and a crispy coconut.
Grape and lychee base is a soft biscuit spoon mixed with lime and kaffir lime, combined with a candied mango, passion and aloe vera in a black chocolate rectangle.
