Guide Michelin 2025: Two Stars for l’Abysse Monte Carlo, One Star for Elsa

Monte-Carlo Société des Bains de Mer shone through its gastronomy at the Michelin Guide France 2025 Awards Ceremony, held this Monday, March 31st in Metz. Just eight months after its opening in July 2024, L'Abysse Monte-Carlo, a true temple of sushi art at the Hôtel Hermitage Monte-Carlo, was awarded two stars. Elsa, the gourmet restaurant at the Monte-Carlo Beach, earned a star one year after Chef Marcel Ravin and Chef Domenico D'Antonio took over the restaurant. At the Monte-Carlo Bay Hotel & Resort, the Blue Bay Marcel Ravin** received the Passion Dessert 2025 Award. Monte-Carlo Société des Bains de Mer strengthens its status as the most starred resort in Europe with 10 stars.

Two stars for L'Abysse Monte-Carlo

Eight months after its opening, these two stars represent a true mark of confidence for Chef Yannick Alléno, sushi master Yasunari Okazaki, and the entire restaurant team. They also recognize their relentless pursuit of excellence and their mastery of the art of sushi.

At L'Abysse Monte-Carlo, each creation tells the story of the seasons while respecting tradition. Sourced from local and responsible fishing, the fish are caught according to their reproductive cycles to preserve the different species. Sushi Master Yasunari Okazaki works closely with fishermen who practice targeted sustainable fishing methods and ikejime to preserve the fish flesh intact. Beauty and respect for the product are essential in the art of sushi. Working with spring, summer, fall, and winter fish, Sushi Master Yasunari Okazaki evolves the menu based on the seasons and the fishermen's catches.

This double distinction from the Red Guide confirms L'Abysse Monte-Carlo as a must-see destination, where every detail, from the food to the decor, is an invitation to travel.

The Hôtel Hermitage Monte-Carlo is therefore more than ever the Hôtel des Connaisseurs.

A star for Elsa

In the intimate setting of Monte-Carlo Beach, the Elsa restaurant is a jewel in the heart of the Riviera. Its elegant atmosphere, inspired by 1930s chic, offers a moment of interlude in the Mediterranean art of living. The dining room begins a marine immersion, where azure tones delicately evoke the contours of the coast. A decor bathed in blue and light for a suspended moment, at lunch or dinner. The vast terrace, with the sea as its only horizon, invites a captivating sensory experience, lulled by the murmur of the waves and caressed by the sea breeze.

This distinction marks a highlight for Chef Marcel Ravin, Chef Domenico D'Antonio, who was entrusted with the helm of Elsa, and the teams at Monte-Carlo Beach, just one year after the Chef took the reins of Elsa to develop a unique "marine garden" concept. From his native Martinique, Chef Marcel Ravin, who now holds three Michelin stars, maintains a deep respect for fishing and maritime culture. He chose to celebrate them through the menu at Elsa restaurant, offering a veritable marine garden, where the delights of the sea harmonize with land-based treasures. Bold combinations, such as Piedmont Squab with morels, squid ink, cauda sauce, and herbaceous plin ravioli; Rock Red Mullet cooked on the rock, roasted head consommé; or Floating Island Crackers with sea lettuce and spirulina and frosted Menton lemon, reveal a delicious symphony of flavors, celebrating the richness of our marine environment. Here, steamed with seawater, there, a marine and vegetable jus. Each flavor of the sea and the fish enhances the produce of the land in a gastronomic experience that is as ethical as it is delicious.

The Passion Dessert 2025 Award awarded to the Blue Bay Marcel Ravin**

At the Monte-Carlo Bay Hotel & Resort, a special mention goes to the BluBlue Bay Marcel Ravin** and Pastry Chef Floriane Grand with the Passion Dessert 2025 Title. Since 2019, the famous red guide has highlighted pastry chefs who significantly contribute to the gastronomic experience. The Passion Dessert title thus highlights these sweet artisans, all generations combined, who today are paving the way for a pastry that is both inventive and committed, offering their guests unique experiences. Floriane Grand, the hotel's Pastry Chef, has worked alongside Chef Marcel Ravin for six years. The culinary identity of Blue Bay Marcel Ravin** extends into pastry thanks to Floriane's work. Together, the two chefs draw inspiration from the garden, aromatic herbs, and seasonality, and forge a unique connection with the Caribbean through their creations. Floriane strives to find the balance between lightness and a little sweetness, without forgetting indulgence. His desserts reflect his singular talent and demonstrate his unique mastery, always striving for perfection.
